The number one cheese recipe in America is Macaroni and Cheese. It is also on the Top 10 list of children’s favorite foods. (Adults love it, too.) It’s been served to families since the late 1700s. These cheesy factoids are all from the Gone-ta-Pott cheese facts page.
With the biggest storm of the year dumping its wet and wild weather on Sacramento this week, everyone is craving comfort foods. What better comfort food could you make than a bowl of mac and cheese, bubbling hot from the stove or oven? Here are the best recipes for mac and cheese to make.
There are so many different ways to make it, and different people have their own favorite versions. When my children were little, they insisted on having it with hot dogs sliced into the pasta and cheese, or with Spam cut into cubes. Yes, you read that correctly. Spam to them, was the food of the gods. At least the processed and canned meat gods.
Now that the kids are grown, we’ve moved on to grown up macaroni and cheese. However, even if you have small children, they’ll love this macaroni and cheese recipe with bacon. FoodNetwork has many more recipes for the cheesy pasta, and I’ve posted the links to six of them at the end of this article.
When you’re doing the grown up version of this recipe, you must have wine with this hearty pasta. A California Syrah goes perfectly.
Recipe for Hearty Macaroni and Cheese with Bacon
- 1 lb elbow macaroni
- ½ lb cheddar cheese
- ½ lb cooked bacon, chopped
- 4 green onions, chopped (you can also chop half a sweet yellow onion)
- 1 Tbsp butter
- 1 Tbsp flour
- 1 tsp salt
- ½ tsp pepper
- ½ cup half and half
- Optional: ¼ to ½ cup panko bread crumbs
How to make macaroni and cheese
Cook the bacon and cut into small pieces. (Sometimes I use the bacon in a box that is precooked and warmed in the microwave to make this dinner more quickly.)
Boil water and cook the macaroni according to the package directions.
While the macaroni cooks, melt the butter in a pan.
Add the flour to the melted butter, then the salt and pepper. Gradually stir in the cream until the sauce becomes thin enough to stir easily. You may need to add a touch more cream.
Stir in the cheese until melted. Now the sauce will thicken a bit.
Drain the macaroni. Stir the macaroni, green onions, and bacon into the cheese sauce.
Serve immediately while hot, or for an even fancier feast,
Sprinkle ¼ to ½ of panko bread crumbs on top. Place under the broiler until the top browns.
