Hearts of Palm with Tomato and Shallots in a Champagne Vinaigrette
Steak Diane, Baked Sweet Potatoes with Maple Jalapeno Crema, Lemon-scented Asparagus
Chocolate Hazelnut Fondue
First Course Appetizer and Cocktail:
1 thin slice truffle mousse pate from Cosentino’s deli (on special this week)
6 – 12 fancy crackers
1 split of champagne, chilled
1 small, 11-oz can strawberry nectar, chilled
2 whole fresh strawberries

For this first course, take some help from local market Cosentino’s and buy a thin slice of the to-die-for truffle mousse pate sold at the deli counter. While it may seem pricy at $17 per pound, you need only a small amount to serve two as an appetizer for your romantic Valentine’s Day dinner. And because Cosentino’s sells it by the slice, just tell the deli person you only need enough for a small serving for two people. And Cosentino’s has their truffle mousse pate on special this week. One thin slice will cost just a few dollars.
Earlier in the day, arrange the slice of pate in the center of a little, pretty serving plate. Arrange some fancy crackers (not saltines) around the pate. Place a couple of chives on top of the pate slice as garnish. Wrap plate with plastic wrap and store in the fridge until ready to serve.
Earlier in the day or the night before, place the split of champagne and small, 11-oz can of strawberry nectar in the fridge to make sure it is well chilled for the evening. It is also nice to chill the champagne glasses in the freezer ahead of time.
When ready to serve the first course, open the split of champagne. Pour 1 ounce of strawberry nectar into each of the two champagne glasses. Fill the rest of the glasses with champagne. Drop a whole fresh strawberry into each glass.
Remove the plastic wrap from the pate appetizer plate and serve with Be Mine Champagne Cocktails.
