Superbowl Sunday is in just a few days now! Enjoy these recipes for snacks, like chicken wings, pigs in a blanket, and dipping pizza sticks, to much on during the big game! All of these recipes are fairly quick & easy, so you can be hanging out with your guests and enjoying the game, rather than standing around in the kitchen!
BBQ Wings with Blue Cheese Dip
2 lb chicken wings
2T olive oil
1/2tsp hot pepper sauce
2T tomato paste
2tsp brown sugar
1 garlic clove, crushed
1 shallot, chopped
1/2C blue cheese, crumbled
2/3C sour cream
2T chives, cut up
1T lemon juice
Place oil, hot pepper sauce, shallot, oregano, tomato paste, brown sugar, and garlic into a blender and blend until smooth. Place in a large plastic bag with the chicken wings and shake around to coat. Put in fridge to marinate for at least an hour.
Preheat oven to 375 degrees. Coat a baking pan with non-stick spray and place the chicken wings on the pan. Bake for 20 minutes, then flip and bake for another 15 minutes, until there is no pink inside the chicken wing. Baste as they cook for extra flavor.
For the dip, blend together the blue cheese, sour cream, chives, and lemon juice.
Chicken Wing Variations:
Honey Glazed Wings – for the marinade, combine 1C honey, 2T hot pepper sauce, 2T lime juice, and 2T fresh grated ginger. Follow instructions above.
Garlicky Ranch Wings – bake or fry the wings first for this recipe. Melt 2tsp butter and combine with 1tsp minced garlic and a packet or dry Ranch mix. Coat the wings.
Super-Easy Cheesy Wing Dip – Mix together 2 packages of softened cream cheese, 1C Ranch dressing, 1C of shredded cheddar cheese, and hot pepper sauce to taste. Melt in microwave and stir together.
Pigs in a Blanket
This version, from Martha Stewart, is easy, baked, and super flaky and delicious!
2 lb. mini hot dogs
cheddar cheese, onions (opt.)
1 lg egg
1 box frozen puff pastry, thawed
Saute’ the chopped onion in butter if you want to include onions. Cut the hot dogs in half and stuff in some onions and a slice of cheddar cheese, if you like. If you do not do this, poke the hot dogs with a fork.
On a floured surface, roll out the puff pastry and cut into strips to wrap around the hot dogs (about 1.5″ wide and 3.5″ long).
Coat a baking pan with non-stick spray. In a small bowl, mix the egg and 1T water.
Put a hot dog at one end of a pastry strip, and roll until it is wrapped in the strip. Use the egg to help it stick together if necessary. Put each wrapped hot dog onto the baking pan.
Transfer to the fridge for about 15 minutes, and set your oven to preheat at 450 degrees.
Bake until puffed and golden, about 20 minutes.
Serve with ketchup and mustard. The chicken wing dips (above) are also great with these!
Dipping Pizza Sticks
3- 1lb. loaves frozen pizza dough, thawed
9 string cheese sticks
Cut each pizza dough loaf into six equal pieces, and roll each piece into a ball.
On a floured surface (or on waxed paper), shape each dough ball into a 6″x3″ rectangle.
Coat a baking sheet with non-stick cooking spray.
Sprinkle each rectangle with garlic powder, and lay half of a cheese stick (peel apart into two) inside. Wrap the dough around the cheese stick half. Place pizza sticks onto the baking sheet.
Brush the tops with olive oil, and sprinkle with parmesan cheese.
Preheat the oven to 400 degrees while the pizza sticks rest and rise for 20 minutes.
Bake for 18-20 minutes, until the tops are golden brown.
Serve with a bowl of warmed up marinara sauce.
