It’s raining in east Las Vegas, and though we do not see much of the wet stuff throughout the year, it has blessed our dry city with it’s presence. Accompanied by the cold, everyone is looking for something toasty and tasty to warm their bodies. During the cold season everyone loves soups and sandwiches. Below is a recipe for Squash soup and Grilled Cheese sandwiches with a twist. A simple and easy dish to make and warm your loved ones tummy’s.
Starting a new tradition, this column will be featuring the Weekly Special’s Recipe consisting of food items that are on weekly sales lists at grocery stores and farmer’s markets located on the east side of Las Vegas. Squash Soup – This can be made with any squash, today we’ll use yellow squash
2 large crooked neck yellow squash, chopped and seeded
3/4 green bell pepper, chopped and seeded
1 medium yellow onion, chopped ($0.98 pack of yellow onions special at Fresh n Easy)
1 1/2 cups cubed or grated cheddar cheese ($3.89 block or grated cheddar special at Fresh n Easy)
2 tablespoons of butter
1 minced garlic clove
1/2 teaspoon ginger
1/2 teaspoon basil (dryed or freshly chopped)
salt & pepper to taste
Heat up butter in large saucepan.
Add squash, onions, garlic and bell peppers and brown on high for about 5 minutes.
Lower flame to medium-high and add water to covering squash and bring to a boil.
Drain water from squash and put mix in blender and blend to a creamy texture.
Place mixture back into saucepan on low heat and stir in cheese slowly.
Add basil, ginger, honey and stir.
Add salt and pepper to taste.
Keep soup on low and cook for about 10 minutes constantly stirring.
Place in soup bowls and serve.
Grilled Cheese with a twist
8 slices of Texas toast
2 tablespoons of butter
2 tablespoons mayonnaise
8 slices of cheddar cheese or Velveeta cheese (for those wanting a creamier grilled cheese)
In large non-stick skillet, melt 1 tablespoon of butter on medium heat.
Spread mayonnaise over the 8 slice of bread on one side only.
Place 2 pieces of bread (mayonnaise side up) in skillet, add 2 slices of cheese to each.
Place 2 pieces of bread (mayonnaise side down) over the cheese.
Grill 1 1/2 minutes til golden color and turn, add remaining tablespoon of butter to pan.
Lightly lift the sandwich so melted butter can get underneath and grill for another minutes or so.
Serve with Squash soup.
